A quick and easy to make chowder that is thick and delicious and can be made with either corn or potatoes or both!

Roasted Corn Chowder Soup

Sausage & Corn Chowder
- 1 package Roasted Corn Chowder Quick Mix
- 4 cups milk
- ½ pound country sausage (mild or spicy)
- 1 cup corn (if using canned, drain)
- 1 bunch green onions (sliced thin, greens only)
Cook sausage in skillet until done. Drain on paper towel to remove excess grease and set aside.
In a two quart sauce-pan, whisk the Roasted Corn Chowder Quick Mix into milk. Bring to a simmer, stirring often. Reduce heat and simmer 10 minutes. Add sausage and corn and continue cooking for 3 minutes.
Serves 4

Loaded Roasted Corn and Potato Chowder
- 1 packaged Roasted Corn Chowder Quick Mix
- 4 ½ cups milk
- 2 cups (about 1 pound) red skin potatoes (small dice)
- ½ cup shredded cheddar cheese
- 1 bunch green onion (sliced thin, greens only)
- ½ cup cooked bacon (chopped)
In a sauce-pan, add diced potatoes and enough water to cover. Cook until soft. Drain and set aside.
In a two quart sauce-pan, whisk Roasted Corn Chowder Quick Mix into milk. Bring to a simmer, stirring often. Reduce heat and simmer 10 minutes. Remove from heat and stir in the potatoes, shredded cheese, bacon and green onions.
